Crunchy Oatmeal Cookies

I love to browse thru the Cooking section if i am around in the bookshop, however a favourite place to check-out for good cooking books will be the MPH Bookshop. If you are in luck you might find a gem among all the selections. Once i found a hardcover book on creating fondants and recently I bought The Great Big Cookie Book during a mark-down sale in Seremban. I love thumbing thru the glossy pages,looking at the perfectly presented pictures, which can make you drool at times...Finally, i managed to try out one of the fabulous recipe in the book with some adjustment on my side..like always :), i make two batches and got about 2 bottles of these really delicious cookies.Will be in my list for the coming Raya celebration!

Ingredients
175g / 3/4 cup butter
125g / 3/4 cup caster sugar
1 egg yolk
175g / 1 1/2 cups plain flour
5ml / 1 teaspoon soda bicarbonate
40g / 1/2 cup rolled oat
40g / 1/2 almond slice ( toasted for 5 minutes beforehand)

1. Cream the butter and sugar until light and fluffy. Mix in the egg yolkand stir until well blended.

2.Sift the flour and soda bicarbonate, then stir into the butter mixture. Add the oat and almond, stir to blend. Chill for at least 20 minutes in the fridge.

3.Preheat the oven to 190 celcius. Grease or lined a baking sheet.

4. Roll the dough into balls. Place onto baking sheet and flatten with the bottom of glass (or whatever works for you).

5. Bake for 12-15 minutes until golden. If you like your cookies crunch like I do, you can leave bake them a bit longer too.Transfer to wire rack to cool before storing.
