Apple and Cinnanom Muffin

These was done a few days back but I am otherwise engaged in my ermsss..other extra-curricular activies( read as spending my time with the Silat group at FRIM, kepong). This muffin rocks, full of apples and a dash of cinnamon, beats having to buy 'em at the bakery (can't seemed to get a good apple cinnamon muffin around here anyway).
Ingredients
1 egg, beaten

3 tbsp caster sugar

1/2 cup milk

1/2 cup butter (melted)

11/4 plain flour (sifted)

11/2 tsp baking powder

pinch of salt

1/2 tsp ground cinnamon

2 small eating apples (peeled, finely chopped)

1.Preheat oven to 180 celcius. Line your muffin tin or use muffin casing (as you like). Mix the egg, sugar, milk and melted butter in a large bowl. Sift in the flour, baking powder salt and cinnamon. Add the chopped apple and mix roughly.

2. Spoon the mixture into prepared muffin cases. Topped with cinnamon topping. Bake for 25-30 minutes until golden brown. Transfer to wire rack to cool.

3. Do not overmix the muffin mixture, it should be lumpy.

For topping

1/3 cup brown sugar

2 tbsp all purpose flour

1 tsp ground cinnamon

1 tbsp butter

In a small bowl, mix together brown sugar, 2 tbsp flour and ground cinnamon. Cut in the butter until mixture resemble corse breadcrumb. Sprinkle topping over muffin.
