Brown Sugar Meatloaf


Been craving for something meaty and fullfilling at the same time. Search for a simple recipe at Allrecipes and came across this one. A sure winner for me, at least. This recipe will yield a huge loaf, so if you are a small eater better halved the recipe. I stech mine for a couple of days, including making the meatloaf into burgers. Or you can also make these into individual servings by baking in a muffin pan . The topping of brown sugar and ketchup might sound a bit weird but it is delicious, give it a try. Since I thought the original recipe is a bit bland for my Malay taste, i added some spices and onions and some veggies too.Definitely, the best comfort food at the moment . Ingredients
1 1/2 pounds (700g) lean ground beef
1 cup frozen mixed veggie
1 packet Maggi Cream of Mushroom Soup
3/4 cup milk
2 eggs
1 1/2 teaspoons salt
1/4 teaspoon ground black pepper
1 red onion, chopped
3 garlic , chopped
1/4 teaspoon allspice
 3/4 cup finely crushed saltine cracker crumbs (biskut masin) or can be substituted with breadcrumbs

Topping
1/3 cup packed brown sugar

1/2 cup ketchup


Directions

Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 5x9 inch loaf pan. Put to slice of bread on the bottom of the pan. This will absorb the excess liquid of the meatloaf during baking.


 In a mixing bowl, mix thoroughly all remaining ingredients and shape into a loaf. Place on top of the ketchup.

Bake in preheated oven for 1 hour or until juices are clear.

Combine the brown sugar and  ketchup. Around 40 minutes baking, open the oven and spread the topping ontop the meatloaf and continue baking until done.
 
Served with veggies or mashed potatoes, I hade mine with garlic bread hahah..:)
