Light Lemon Poppy Seed Cake

My fave piece of heaven,...one fine evening..


Nyum....nyummmm... a half eaten piece of mine..no sharing please !

There are countless of recipes for this particular cake in the recipe  section of the internet. Well, this is my version, which you can either prepared with or without the lemon syrup ( for the extra sour kick to your tastebud)

Ingredients
1 cup of caster sugar
250g butter
2 1/4 cups of flour
2 teaspoon baking powder
1 teaspoon soda bicarbonate

3/4 cup of buttermilk ( i subs with 3/4 cup milk + 2tbs lemon juice and let rest for 15 minutes before use)
6 eggs (medium size)
2 teaspoon lemon oil
1 1/2 tablespoons lemon zest
3  tablespoons poppy seeds

lemon syrup
1/2 cup white sugar
3/4 cup lemon juice


Directions


1.Preheat oven to 350 degrees F (175 degrees C). Grease and flour the baking pan. I use 9 inch round pan.

2.Sift together the flour, baking powder and soda bicorbanate, Beat the butter and sugar until until creamy.Beat in the eggs, one at a time, beating well after each addition.

3.Add alternately the sifted flour mixture and the buttermilk to the butter mixture. Mix until just blended. Stir in lemon rind and poppy seeds. Pour mixture into prepared pans and smooth tops.

4.Bake at 350 degrees F (175 degrees C) for 50 minutes or until browned and a knife inserted in the center comes out clean. Cool on rack for 15 minutes before turning out of pans. I obviously overcooked mine a bit ( see pic below)


5. If you like to have the cake with the lemon syrup, lessen the quantity of sugar in the cake a by a quarter.In a saucepan over low heat; cook 1/2 cup white sugar and the lemon juice until stirring until sugar is dissolved. Let cool to just warm or to room temperature. Remove the cake from the oven and place the pan on a wire rack-place a cookie sheet underneath this rack. Prick the top of the cake several times with a toothpick. Brush the top of the cake with the warm or room temperature syrup, allowing lots of the syrup to run down and soak into the sides and bottom of the cake. Cool slightly in the pan before removing the cake to the wire rack to cool completely. Best eaten a  day after baking for the full flavor to emerged.

Burger Tuna Ala Labu



Soalan cepu-emas di keluaeran kali ini "siapakah budak comel diatas"...hahah..jgn mak dier marah aku ambik anak dier buuat model tuna burger sudah ler... jawapn nyer..itu adalah Nurul Iman, anak ateh aku yang bongsu, kena paksa  posing dengan tuna burger itu..sampai senget2 mulut dah , tunggu induk snap gambar yer...

Al-kisah nyer aku nampak 2 tin tuna ayam brand tuh dah berape lama terkonteng2 dalam almari tuh, jadi aku oun buat dua projek nak menghabiskan stok nih. Nih yer lah projek aku yang pertama...projek yang kedua..pu n dah selamat berjalan..tapi akakn dipamerkan disini di keluaran akan datang yer.. Jom layan resepi untuk tuna patties atau tunna burger ini.. ala2 burger versi veggei lah kot...

Bahan-Bahan


3 biji kentang, dikupas dan direbus empuk

1 cawan serbuk roti (breadcrumb)

Bahan A
2 tin tuna (185 g),
-guna Ayam Brand , yang ader mayonise tuh., (kalau nak fguna yang dalam brine or oil pun ok, tapi  ditapsi dulu  ler)

1 biji telur, dipukul

1 biji bawang besar, didadu halus

1/2 biji cili benggala  merah - didadu ( kalau nak guna hijau ker, oren ker ok gak)

garam dan lada hitam sebagai perasa

Untuk hidangan
4 biji roti burger
1 biji tomota, dihiris nipis
4 keping daun salad

Cara-Cara Penyediaan:

1.Kentang direbus dan dilecek.

2.Campurkan semua bahan A dan gaul rata. persana dengan garam dan lada hitam. Nak letak lada sulah pun boleh. masukkan kentang lecek dan serbuk roti. Uli sebati dan bentukkan menjadi kepingan nipis (patty).

3. Simpan sebnatr dalam peti-ais/freezer, dlm 30-40 minit supaya patties tidak mudah pecah semasa menggoreng.

4.Gunakan kuali leper dan panaskan 3 sudu minyak. Goreng kepingan tuna sehingga garing, pastikan tuna betul2 masak sebelum diterbalikkan.

5. Boleh dihidangankan ala2 makan burger yer seperti model diatas.

EHS Appreciation Dinner at PULLMAN PUTRAJAYA

umaat lepas ader makan malam untuk AJK EHS di The Village by the Lake, Pullman Hotel, Putrajaya. Restoren tuh dibuat atas air tepi tasik dan pemandangan yang sungguh indah dan mengasyikkan, ala2 over vea lah plak. Dinner dibuat alas BBQ buffet, not bad lah jugak. The company was great and the also the games..sakit perut gelak.Dapat gift pen Sheffear jugak. Thank you boss...

Brown Sugar Meatloaf


Been craving for something meaty and fullfilling at the same time. Search for a simple recipe at Allrecipes and came across this one. A sure winner for me, at least. This recipe will yield a huge loaf, so if you are a small eater better halved the recipe. I stech mine for a couple of days, including making the meatloaf into burgers. Or you can also make these into individual servings by baking in a muffin pan . The topping of brown sugar and ketchup might sound a bit weird but it is delicious, give it a try. Since I thought the original recipe is a bit bland for my Malay taste, i added some spices and onions and some veggies too.Definitely, the best comfort food at the moment . Ingredients
1 1/2 pounds (700g) lean ground beef
1 cup frozen mixed veggie
1 packet Maggi Cream of Mushroom Soup
3/4 cup milk
2 eggs
1 1/2 teaspoons salt
1/4 teaspoon ground black pepper
1 red onion, chopped
3 garlic , chopped
1/4 teaspoon allspice
 3/4 cup finely crushed saltine cracker crumbs (biskut masin) or can be substituted with breadcrumbs

Topping
1/3 cup packed brown sugar

1/2 cup ketchup


Directions

Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 5x9 inch loaf pan. Put to slice of bread on the bottom of the pan. This will absorb the excess liquid of the meatloaf during baking.


 In a mixing bowl, mix thoroughly all remaining ingredients and shape into a loaf. Place on top of the ketchup.

Bake in preheated oven for 1 hour or until juices are clear.

Combine the brown sugar and  ketchup. Around 40 minutes baking, open the oven and spread the topping ontop the meatloaf and continue baking until done.
 
Served with veggies or mashed potatoes, I hade mine with garlic bread hahah..:)

Kek Kukus Alwani

Sekarang ader lah sedikit kerajinan nak memasak kek2 nih balik alhamdullilah, itu pun setelah sekian lama dalam hiayus state, atas sebab2 yang tidak dapat dielakkan. Buat kek nih masa jamuan makan kat rumah abang di Salak. Mak kata kek lapis2 nih memang menyeksa diri, aper tak neyr kena tunggu satu2 nak melapis nyer baru boleh buat kerja lain. Tapi sebab sedap kan dan tekak sendiri yang nak makan kena lah jugak merajinkan diri. masa kukus kek nih memang ader letak kaler merah, tapi ntah cam maner kaler merah tuh bertukar cam oren or coklat..ish ishhh..hilang sket seri kek ku ini.

Saja buat 11/2 adunan sebab nak ader lebih nak buat kek kukus comel cam kat bawah tuh..letak oreo ... mari lah sama2 layan mata ..rasa resepi nih dari MYR lah jugak seperti biasa. terima kasih yer kawan2 penyumbang resepi asal.

Resepi asal untuk dulang pembakar 6 inci yer..



Bahan-bahan

1 cawan tepung gandum

1/3 cawan horlicks

5 biji telur A (pada suhu bilik)

200 g marjerin (mentega pun boleh)

1/2 cawan gula halus

1/3 cawan susu pekat manis

kismis hitam secukupnya (dihiris) (stok dah minimun tuh yang tak nampak lam lapis kek tuh, cam malu2 jer)

1 sdt esen vanilla

pewarna hijau, merah dan oren ( pewarna merah ku telah bertukar menjadi oren..bila kukus kenape eks?)

Cara-cara  Penyediaan:

Sediakan pengukus. Panaskan airnya. Sediakan loyang. Lengserkan dgn mentega dan taburkan dgn sedikit tepung.

Ayak tepung bersama horlicks di dlm satu bekas yang agak besar. Ketepikan seketika.

Pukul marjerin/mentega dgn gula sehingga kembang dan putih. (high speed)

Masukkan telur satu demi satu sambil diputar. (low speed)

Masukkan susu pekat dan putar lagi. (low speed)

Masukkan tepung dan putar hingga sebati. (low speed)

Masukkan esen vanilla. Ratakan.

Bahagikan adunan kpd 3 bahagian. Warnakan merah, hijau dan oren.

Tuangkan adunan merah ke dlm loyang terlebih dahulu, dan taburkan kismis di atasnya. Kemudian, tutuplah loyang dgn kertas foil atau plastik. Kukus selama 7 minit atau hingga dah tak cair. ( part nih selalu fail sebab saya selalu ikut suka hati jer bila bab melapis kaler2 haha..tuh yang kadang2 tunggang langgang jer susunan)
Ulangi langkah 10 utk lapisan hijau atau oren. Kukus selama 15 minit atau hingga dah tak cair.

Akhir sekali tuangkan lapisan seterusnya dan taburkan kismis. Kukus sehingga betul2 masak.

P/S : Nih pulak ader baki2 yang kaler ijau tuh, atas permintaan anak buah letakkan dalam loyang kecik dan letakakn biskut oreo kat atas haha jadik ler kek kukus oreo plak , budak2 memang suka makan yang cam nih eks..lawa gak kaler ijau ngan hitam ahaks...

Thrillers, Adventures & Actions--My Other passion

Last night was doing some spring cleaning in the bedroom and to my surprise it seemed that I have quite a collection of books in every nook and cranny of the rooms even under the bed..hmmmmmm... infact these are only some of my storybooks/ novels collection . Some which I have amassed over the years have been put into boxes and stored away. I got couple of boxes already and I think close to 150 books... maybe someday i might donate it somewhere.

As you can figure from the pictures most of the books that i read is the thrillers and action packed ones, with few of others genre. At the moment I am hooked to Clive Clussler novels, and it happened by chance when I was browsing at Book Access at AMcorp Mall in PJ (where they are selling these books and almost unbelievably low prices), and came across these selection of books. However my all times fave would be matthey Riley and james Rollins , theirs stories is the ultimate for action seeker readers like me. So, when I am in no mood to rock in the kitchen I would be in my bedroom reading until my eyes watered.

In you like a bit of medical, action  & alien invasion thigy , my bet would be  novels by Scot Sigler ( Infected and Contagious), both are very good and entertaining reading.

African Marble Cake

African Marble Cake

Kek nih sangat femes lah di kalangan blogger masakan nih, mudah dan sedap..seperti biasa resepi bahan2 nyer adalah samer jer, cuma bila part nak mecorakkan tuh jer yang lain, terpulang kepada tekak dan kerativiti masing2 ler yer. kat sini kita guna pandan paste dan coklat emulco.kek nih a bit light rasa cam roti pun ader.. It has a nice crust on top bila dah masak, i like.Thanks kepada tuan empunya resepi asal yer.

Bahan-bahan :

250 g Tepung naik sendiri

200 g gula kastor

6 biji telur

1 camb ovellate

1 camt baking pawder

2 camb susu pekat

50 g air

175 g butter - cairkan

coklat/pandan emulco

Cara  Penyediaan:

Pukul semua bahan kecuali butter cair dan emulco hingga pekat dan kuantitinya menjadi double. Masukkan butter cair dan kacau adunan sebati.

Bahagikan adunan kepada dua bahagian. satu bahagian letakkan emulco pandan dan satu lagi emulco coklat.

Tuang adunan  pandan  dalam loyang. Tuangkan sedikit2 adunan emulco dan corakkan atas adunan banyak.

Bakar. (Pastikan adunan hanya separuh loyang sebab kek ni akan naik double). Suhu 160 selama 45 minit atau sehingga masak.

Setelah masak, biarkan 5 minit dalam loyang lepas tu keluarkan. Ini untuk mengelakkan kek dari mudah pecah dan berderai bila dipotong.
