Raisin Muffin

I remember that I started out baking with simple muffin recipes from Allrecipes , I think I have tried quite a lot of combinations of ingredients from sweet to savoury muffin. As i progressed towards more complicated (ehem..ehem) baking, i kinda forget the simple pleasure of baking a muffin. I mean what could be so easy than throwing everything together into a bowl, stirred and ready to be put into the oven. For a simple muffin recipe you don't even need a mixer, just a wooden spoon. So enough of my babbling, last night I came across this best Ever Muffin recipes and walaaa... 15 minutes later the batter was done with inclusion of 1 cup of chopped raisin.. If you are looking for the simplest and satisfying muffin recipe here it is.. Peach & Cream Cheese Pie

I made this pie quite a while back since I have a can of peaches leftovers from making fruit cocktail. This is a very simple and refereshing pie dish. If you dont have peaches, you can substitute with other fruits too such as canned pineapples or even slices of apples and topped with some raisin and sugar. As for the crust , there are many variations to choose from, you have oild crust, hot water crust, I use this crust which uses vinegar and an egg and sugar, if you are making savoury pie you might want to less the sugar and add in some salt too. Ingredients For Crust • 1/2 cup butter • 1/3 cup white sugar • 1 cup all-purpose flour • 2 tablespoon iced water • 1 egg yolk • 3/4 teaspoon distilled white vinegar For Topping • 250g package cream cheese • 1 egg • 1/4 teaspoon almond extract • 1/4 cup white sugar • 1/2 teaspoon vanilla extract • 1 (28 ounce) can peach slices, drained • almond strips DIRECTIONS 1. Mini Baked Apple Puff

Resepi nih adapted dari Fidadaud bertajuk Mini Fried Apple Pie di My Resepi, tetapi disebabkan kemalasan yang melampau dan puff pastry tuh dah berzaman duk dalam freezer, tukar kan jer kulit pastri tuh guna puff pastry yang di potong dua (tiga segi). So bila pakai puff pastry kena lah baked dlm oven.. so good when its hot, bila dah sejuk kureng sikit rasa. Bahan Inti: 2 biji apple merah - potong dadu 1/3 cawan gula (jika tak suka manis, boleh kurangkan kepada 1/4 cawan saja) 1/2 sdk serbuk kayu manis 1 sdb perahan jus lemon 1 sdk tepung jagung + 1 sdb air Kulit : Puff Patry jenama kawan putih telur untuk disapu Cara-cara 1.Inti: Dalam sauce pan (periuk @ kuali biasa boleh juga lah), campurkan apple, gula dan serbuk kayu manis. Gaul sebati atas api yang kecil. 2.Campurkan jus lemon. Gaul sebati. Masukkan pula bancuhan tepung jagung. Gaul dan masak sehingga dapat kepekatan yang ideal. Chocolate Cake with Strawberry Topping

This cake was baked for my friends birthday, which we celebrated in Aunty Aini's in Nilai on 14th February. Cheers to Ida and Nora..semoga panjang umur dan murah rezeki yer... Thanks to all who came for this small and intimate dinner. Tahun depan kita plan lagi. YOu can find the recipe for this cake here ( this turn out to be my signature cake of late). The strawberry topping is a request by my dear beloved. Giant was having a sale on strawberry last weekend , one pack of strawberry is sold at 4.99 for 250g ( and i managed to grab the last one, thank God). the fruits are sure sweet and juicy , but too sweet for my best friend tastebud.... A slice of heaven on earth for chocolate lovers.... Nih gambar cake masa belum make-up, sungguh montok dan seksi..

Bahulu Lapis

Resepi dari MYR jugak dari d ayang jack , originally it is supposed to be for bahulu gulung since I am not very patient to gulung2, I doubled the recipe and turned it into bahulu. I like to tweak every recipe that I try ( bad of me eh!), so i use 1 cup of flour instead of the original 3/4 cup, so the end result the cake is a not as soft as it is supposed to be ( mistake is all mine not the recipe). However it is such a delicious old fashioned cake, my mother used to bake this every Raya time until recently. So I guess from now on the resposibilities will be mine. However, i need to perfect the techique before I can embark on a full scale project for this year raya. Dayang jack commented on my report for this cake in MYR, " kalo terlebih tepung misalnya 1 cawan, bole ler tambah 1/2 biji telur lg, atau guna 3 biji telur AA ." Donut

Ambik dari MYR, Resepi asal dari HaSue , Initailly berangan-angan nak salut in chocolate and letak chocolate rice and coloured rice. last2 due to time constrain just tabur castor sugar jer. Anyway folks at home don't like any of the facy shop bought donut topping (unlike yours truely). Maybe next time when the kids are back home I'll make do with some fancy topping kot (cita-cita mesti tinggi). Dapat banyak jugak dari adunan nih, so i freeze some and asked the maid to goreng the next morning. Thats why the picture of the donuts are in tupperware ( sebab terlupa nak ambik gambar while at home, seronok layan donut panas2). If you look closely you'll notice that my donuts are in various sizes ...hahha..well thats to accomodate the various sizes of the people in da haouse ( ehem..excuses excuses). Best Ever Chocolate Cake

That's the original name from Periplus Cakes Book, not something that I came up with. Why the name? some might ask well... you just have to try it out and discover for yoursolf, this is one moist and fluffy chocolate cake , the topping is just heavenly too. Too bad ,I didn't manage to do the topping because I was so sleepy, and the cake was gone when I came back from the office the next day ( that's why you dont do unfinished baking business on the middle of the nite if you are working the next day). I just add some chocolate chips into the mixture before baking. I make a smaller cake 7 inch round , and bake the rest as cupcakes (which I took to the office). Ingredients 125g butter 1/2 cup caster sugar 1/3 cup icing sugar (sifted) 2 eggs, lightly beaten 1 teaspoon venilla essence 1/4 cup blackberry jam ( or any jam of ur liking) 11/4 self rising flour* 1/2 cocoa powder* 1 teaspoon sooda bicarbonate*- sifted together all these 1 cup buttermilk (or fresh milk) Rich Chocolate

Roti John-Homemade

Made these for my two hungry nephews, glad to see that these boys can it, served with side dish of fries and burger meat. The best part is when they said " induk punya roti john lagi best dari pasar malam ".. is that a compliment or what eh? Ingredients 1 pack of bun minced meat /or you can use burger patties and mashed them up real well onions and garlic --diced black pepper salt to taste 2 eggs - whisked a bit mustard mayonaise chili or tomato sauce cucumber/tomato slices 1. Mixed all the ingredients together. Pour the eggs. The misture will be a bit wet and sticky now. 2. Heat the skillet with some butter until melted. 3. Take one bun and split into 2 halves. Put some of the meat mixture onto one side of the bread. Now, fry the bun facedown on the skillet until well cook. Removed from heat when done. 4. Mixed the sauces together onto the bun and topped with cucumber/ tomata slices. Serves with fries.
