Lemon Poppyseed Cake



I like this cake because it has a refreshing tangy taste, a good pick-me-up choice. The poppyseed adds a certain crunchiness to the cake. The cake was make for a niece ( infact it was an impromtu one) to celebrate her birthday when she came back to Atuk's house, hence the limited decoration.However taste wise the cake was excellent.

Lemon PoppySeed Cake
3 cups all-purpose flour
1 1/2 teaspoons baking soda
3/4 teaspoon salt
3/4 cup butter, softened
2 cups white sugar
3 eggs
1/2 cup lemon juice
3/4 cup plain yogurt or buttermilk
3 tablespoons lemon zest
1/4 cup poppy seeds


DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Heavily grease and flour two 9x5 inch loaf pans.
Sift together flour, baking soda, and salt. Set aside.
In a large bowl, cream butter or margarine, and sugar until light and fluffy. Beat in eggs, one at a time.
Mix lemon juice and yogurt together and add alternately with the sifted flour mixture to the butter mixture. Mix until just blended. Stir in lemon rind and poppy seeds. Pour mixture into prepared pans and smooth tops.
Bake at 350 degrees F (175 degrees C) for 50 minutes or until browned and a knife inserted in the center comes out clean. Cool on rack for 15 minutes before turning out of pans.

Chocolate Oil Cupcake & Pink Muffin


Initially, memang tak bercadang nak buat Open House untuk tahun nih, penat sangat rasanyer dan penuh dengan jemputan rumah terbuka kawan2 dan sedara mara yang dekat2 dan jauh2 ( jauh pun kat rawang jer hehe).
Then, the operators kat ofis nih duk komplen yang tipa2 tahun i buat open house, so they expect me to do another one also this year. Aduhaiiii anak omak. So terjebak lah jugak dlm upcara open house tahun nih. SO last Saturday (18 Oct) evening, buatlah masak2 sikit dan jemput bebudak kilang and a few good friends over. Menu nyer buat simple -simple jer, luckily my mom tolong tolong sikit2, mudah sikit keje. Did my first mee rebus ( kenaper rasa kacang lebih haha) and all the rencah2, nasi impit with rendang ayam and sambal sotong, popia goreng dan kuah cicah , and these two chovolate oil cake and pink muffin ( actually its strawberry flavour muffin with blueberry filing inside)



Untuk desert, buat lah muffin dan cupcake nih, senang sebab boleh siapkan dan bakar the nite before and avoding all the hassle.
Pink Muffin @ Jam Muffin
This was taken from Allrecipes and adapted to suit my tastebud.
INGREDIENTS
2 cups all-purpose flour
3 teaspoons baking powder
1/2 teaspoon salt
1/2 cup white sugar
1 egg, beaten
3/4 cup milk (flavour strawberry)
1/4 cup vegetable oil
2 teaspoon strawberry emulco
1 teaspoon pink colouring
Filing
1 cup any flavor fruit jam ( I use bluberry filing)

Preheat oven to 400 degrees F (205 degrees C).
In a large bowl, stir together the flour, baking powder, salt and sugar. Make a well in the center. In a small bowl beat egg, milk and oil together. Pour all at once into the well in the flour mixture. Include in the mix emulco and food colouring.Mix quickly and lightly until moistened, do not beat. The batter will be lumpy.

Place the batter 1/3 of the muffin cup, add jam/filing. Spoon remaining batter over jam. Make sure the batter completely cover the jam or the jam will overflow out of the muffincase.Bake at 400 degrees F for 20-25 minutes or until golden. Do not eat while hot from oven or filing will burn your tongue ...hahhaha


Chocolate Oil Cupcake

Lupa dah resepi nih ambik dari maner but definitely coklat cake but I baked into smaller cupcakes size. Thank you in advance to tuan punya resepi nih.
Bahan2
2 cwn gula halus
2 cwn tepung
3/4 cawan serbuk koko } mesti diayak
2 biji telur
1 cawan buutermilk
1 cawan minyak jagung
1 cawan cair
1 sudu soda bikarbonat } di ayak bersama
2 sudu bsr baking powder }
esen vanila skit
secubit garam
Cara2
1. masukkan dulu minyak, gula, susu dan telur dlm bekas. kacau biar sebati.
2. masukkan gandum dan koko skit2.
3. pastikan gandum dan koko tak berketul. Pour batter into cupcakes/muffin cases.
4. bakar dalam suhu 180 sampai masak , lebih kurang 25 minutes.
