I remember that I started out baking with simple muffin recipes from Allrecipes , I think I have tried quite a lot of combinations of ingredients from sweet to savoury muffin. As i progressed towards more complicated (ehem..ehem) baking, i kinda forget the simple pleasure of baking a muffin. I mean what could be so easy than throwing everything together into a bowl, stirred and ready to be put into the oven. For a simple muffin recipe you don't even need a mixer, just a wooden spoon.
So enough of my babbling, last night I came across this best Ever Muffin recipes and walaaa... 15 minutes later the batter was done with inclusion of 1 cup of chopped raisin.. If you are looking for the simplest and satisfying muffin recipe here it is..
2 cups all-purpose flour
3 teaspoons baking powder
1/2 teaspoon salt
3/4 cup white sugar ( i sub with 1/2 cup white and 1/4 brown sugar)
1 cup milk
1/4 cup vegetable oil
1 cup chopped raisin
1.Preheat oven to 400 degrees F (205 degrees C).
2.Stir together the flour, baking powder, salt and sugar in a large bowl. Make a well in the center. In a small bowl or 2 cup measuring cup, beat egg with a fork. Stir in milk and oil. Pour all at once into the well in the flour mixture. Mix quickly and lightly with a fork until moistened, but do not beat. Add in the chopped muffin. Mix. The batter will be lumpy. Pour the batter into paper lined muffin pan cups.
3.Bake for 25 minutes, or until golden.
