Fudge Brownies

Buat brownies nih untuk bawak potluck ke ofis sempena christmas /new year luncheon baru2 nih dan jugak merasmikan dulang cutter yang dah beberape bulan dibeli tuh. Silap tgk resei so terlebih letak tepung samapi 11/2 cawan ler plak, tapi resepi nih sedap penuh ngan rasa coklat, kalau nak lagi best letaklah topping skali, masyukkkkk.. just the thing for the chocolate lover in all of us! 1 cawan butter/ marjerin , dicairkan 1 cawan serbuk koko 1 1/2 cwn gula kaster 1/2 cawan gula perang 11/2 sudu besar esen vanilla 4 biji telur 11/3 cawan tepung 1 susu kecil serbuk penaik 1/2 susu kecil garam halus 1 cwn kekacang atau coklat chip ( saya guna coklat chip perisa strawberry, kaler pink) Satukan serbuk koko dan butter yang dicairkan. salah satu kegilaan forumers kat MYR la nih duk buat apam mentega resipe kak fieza nih. Sungguh lazat dan berkrim plak..laku sungguh sampai dah 2 kali buat. First time buat mungkin gula hangus nyer kurang dan susu terlebih so warna dan rasa kurang menyengat. Tapi 2nd time buat excellent, mak siap kata leh buat jual lagi wahhh...Senang dan sedap.Orang lain pakai acuan kih lompang kita plak pakai acuan apam yang besar2 nih. so 2 ketul makan dah kenyang. Chocolate, Date and Walnut Slice

Another attempt o finish off the jar of dates in the pantry, and some will wonder what is my fixation with dates, dates and dates.... Chocolate, Date and Walnut Slice 3/4 cups dried dates /140g, chopped and cubed 1/2 cup apple juice /125ml 11/2 cups walnut /210g roasted and chopped ( can use hazelnuts too ) 1/2 cup oats/40g blended a bit ( i substituted with Nestum ) 125g dark chocolate 125g butter 3/4 cup caster sugar 3 eggs, lightly beaten sifted cocoa powder, for dusting ( I omit this ) 1. Line and greased 9 inch square tin, with non stick baking paper overhanging on two sides. Preheat oven to 160 Celsius. 2. Combine dates and apple juice and simmer in small pan for 10 minutes or until all liquid has been absorbed. Transfer to bowl to cool. 3.Finely blended the walnut and oat in food processor until combine, then add to date mixture. 4.Melt chocolate in microwave and let cool slightly. beat butter and sugar until creamy, gradually add eggs, beating well after each addition. Dinner at Seaview Restoren , Bagan Lalang

===== Recently we went to Bagan Lalang one fine night for a seafood dinner, we went to our usual place at Seaview Restaurant, if you follow the road to Bagan Lalang beach, its the first place on the right side, with a wooden pintu gerbang and lots of parking ( a bit risky since there's a lot of coconut trees here, park at your own risk !). The choice of dishes for dinner include otak2, ika sweet sour (siakap), ikan bakar, sotong goreng tepung,ketam sweet sour, udang pedas, sayur campur and different types of drinks. Definitely a fulfilling meal! If you are from Nilai or Labu it would take about half and hour to 45 minutes to get here. Be sure to go there with an empty stomach... and takeyour pick from the array of seafood on display and ordered the to be cooked to your specification. The ikan bakar with air asam is excellent choice as the sotong goreng tepung,just to give you a hint .

Tart Telur

dah lama nak wat projek tart telur ler sehinggalah sampai satu hari yang tahap rajin maksima, satu petang ahad yang dingin (huhuhu). Tak puas hati bab nak wat kulit tart nih senget benget jer plak. Nak kena usaha lagi. Tapi dier nyer filing tuh banyak lebih lagi plak, so nak kena wat lagi satu round, this time guna puff pastry jer senang keja letak kan dalam muffin tin. Resepi filing ambik dari MYR, yang kulit tarat ikut satu resipe yang jumpa kat allrecipes.com. Yang ader hitam2 tuh sebab filing letak terlebih so overflow kat kulit tart , so berkerak lah. tak lawa dah tart den ha... akan diusahakan menjadi lebih canggih dan menarik. Pesan dari K.cik MYR filing tuh kalau nak smooth tapiskan dulu telur..ermss Tart Base 2 cwn tepung gandum 1/2 cwn butter , didadu kecil( straight from the fridge) 1/4 cwn gula icing 1 biji kuning telur 1-1/2 sdt ais sejuk Masukkan tepung, gula, dan garam ke dlm doh mixer atau gaul guna tgn Sebatikan. Masukkan butter dan gaul sehingga menjadi breadcrumb

hasil eksperimen with buttercream..kira dah ok tapi lembut sikit kena tambah icing sugar lagi next round. Masih kerastangan nih.. I used this recipe 125g butter 125g shortening 125g krimwell 200g icing sugar Will update once I have mastered the art of buttercream icing. ..... dreaming of a masterpiece haha

Date and Walnut Teacake

Found some leftovers dates in the pantry, look up a recipe that can utilise the dates rather than chucked it out in the bin, came across this great simple and delicoius teacake. The recipe originally called for dates and walnuts since I was lazy to roast the walnuts , i just omitted the whole nut thingy. The batter is a bit on the thick side and I was worried that the cake won't rise, the texture is like quick bread type of loaf. make sure you chopped the dates into pieces or you'll end up which hugh chuncks of dates in your cakes ( that is what you get when you bake in the middle of the night !). This cake can be bake in a 21cm loaf/oblong pan, I just used a 7 inch round cake pan and put some of the extra into muffin case and bake them (this I iced with buttercream frosting and took to office). Somewhat my impression that the cake needs a bit more liquid, perhaps later on I would add extra milk. This cake is not too sweet since it only uses brown sugar and honey but quite moi

Cherry Cake

A very moist and flavourfull cake ( which means I like this cake very much). Simple, just dust some sifted icing sugar for a great presentation. Cherry Cake 125g butter 3/4 caster sugar 2 eggs, lightly beaten 1/2 tsp vanilla essence 1 cup chopped glace cherry 2 cups self-raising flour 3/4 cup buttermilk ( original recipe used milk, but I prefer buttermilk for the extra moisture ) 1. Preheat oven to 180 Celcius 2.Brush with oil and line a 20cm ring tin ( or any pans of your choice) 3. Beat butter and sugar until light and fluffy. Ad the eggs gradually, beating throoughly after each addition. Add the vanilla essence. Combine . Add the cherries. 4.Fold in the sifted flour alternattely with buttermilk. Stir until just combine and misture is almost smooth 5. Spoon mixture into pan, and smooth surface. bake for 30-40 minutes until done. Leave cake in tin for 10 minutes before turning out.

Poppy Seed Cake With Lemon Syrup

This cake was made in a rush to belatedly celebrate a friend's of mine birthday recently. Its a simple cake make sweeter and moister with the addition of lemon syrup poured onto the cake after baking.Happy belated Birthday Aki. Adapted from CAKES ( Periplus). Ingredients 13/4 cups self raising flour 1 tsb soda bicabornate 2 tablespoons poppy seed 185g butter 2/3 cup sugar 2 tablespoon apricot jam ( or any other jam) 1 tsp finely grated finely grated lemon rind 1/4 cup lemon juice 1/3 cup milk 2 eggs Lemon Syrup 1/2 cup caster sugar 1/4 cup lemon juice 1/2 cup water 1. Preheat oven to 180 degrees. Grease 20cm ring tin with butter/oil. 2. Sift flour into large mixing bowl with the soda bicabornate. Add the poppyseed. 3. Beat butter and sugar until light and fluffy. Add the eggs gradually , beating thoroughtly after each addition. Add the jam lemon juice and lemon rind , beat until combined. 4.Fold in the flour alternately with milk. Stir until just combined. 5. Lunch at Aunty Aini's

the quint fish pond, can you spot the fish part of the garden, go green... our hut, our lunch recluse Last Friday, a few us ladies from the office decide to go out for lunch at Aunty Aini's again. This time we opted to sit malay style on one of the two huts provided - completed with a Japanes e table. The hut is big enought to accomodate 6 person, and since there are only 4 of us, is is quite spacius. It has its own ceiling fan and even a call button for service. The ambience is soothing with gardens and plants abundant with fish pond to boot, a very good choice for a lingering lunch hence we called up and ordered ahead and had a wonderful conversation too. Three of us had western food (lamb chop, fish and chip & chicken chop) and one opted for the yummylicious laksa johor. Just look at the size of the serving! Gila makan wooooo....
